This weeks "Cocktail Friday" recipe is in honor of my 3 great college roommates...Kristin, Chrissy and Mary. Nary a Friday night would pass at UMass Amherst without a Frozen Mudslide at Mike's Westview Cafe. Needless to say, nary a Friday would pass without a great "after 10 Mudslides" story!! In honor of Chrisbo, Kristin and Maisy I raise my frozen glass to you and say, "Cheers!"
World's Best Frozen Mudslide
1 1/2 oz Vodka (Absolut)
1 1/2 oz Bailey's irish cream
1 1/2 oz Kahlua
8 cubes Ice
1 1/2 oz Cream
1 scoop Vanilla ice-cream (Häagen-Dazs makes it best!!)
2 scoops Chocolate ice-cream (Häagen-Dazs makes it best!!)
Begin by crushing the 8 ice cubes in a blender. When ice is finely crushed, add the remaining ingredients and blend for 45 seconds on blender's highest setting. Drizzle Chocolate syrup around your glass first, then pour Mudslide mixture into glass gently. Top with whipped cream and chocolate shavings and serve immediately.
